Salmon Kabobs Feature Grill Mates Salmon Seasoning
 

Cubed fresh salmon seasoned with McCormick® Grill Mates® Salmon Seasoning skewered with citrus, cherry tomatoes, mushrooms and zucchini then fire grilled. Serve with a sweet citrus sauce.

Cinnamon Citrus Sauce
1 cup 6 cups honey
1 tsp 2 tbsp McCormick® Cinnamon
2 tsp 4 tbsp orange zest
4 tsp 1/2 cup orange juice


Citrus Salmon Kabobs
1-1/2 lb 9 lbs salmon, 1
1 cup 6 cups orange, split into 8 chunks
1 cup 6 cups tomatoes, cherry
2 cups 12 cups mushroom, stemmed
2 cups 12 cups zucchini, 1
2 tbsp 3/4 cup extra-virgin olive oil
4 tbsp 1/2 cup McCormick® Grill Mates® Salmon Seasoning
 

Method (24-servings)
Cinnamon Citrus Sauce
Place all ingredients in a small pot and heat on low until mixture bubbles for about 2 minutes. Set sauce aside to cool. 

Citrus Salmon Kabobs
Place salmon, orange segments and vegetables on skewer in desired order and brush each kabob with oil before sprinkling seasoning. Next, grill the kabobs over medium high heat for 1 to 2 minutes on each side or until the internal temperature reaches 145°F. Recipe makes 4 kabobs. Serve as shared appetizer or 1 entrée. Serve with citrus sauce.

 

Substititions:
Can substitute trout, cod, grouper, red snapper, sea bass, sole, tilapia, Alaskan Pollock, halibut, mackerel - adjust cooking times accordingly.
