CHIPOTLE PECAN CHICKEN SALAD

For the Salad: |

Chicken Breasts, boneless & skinless |

Azar Chipotle Pecan Pieces-Chopped |

As needed Canola Oil |

Mixed Greens |
|
1/2 Cup
|
Carrots, julienned |

Grape Tomatoes, sliced in half |

Danish Blue Cheese Crumbles |

|
For the Chipotle Pecan Vinaigrette: |
|
1/4 Cup
|
Azar Chipotle Pecans |
|
3/4 Cup
|
Olive oil |
|
1/4 Cup
|
Seasoned Rice Wine Vinegar |
|
2 Tbsp.
|
Chopped Fresh Cilantro |
|
2 Tsp.
|
Sugar |
|
1 Tsp.
|
Salt |
|
1 Tsp.
|
Onion Powder |
|
|
As needed Red Pepper Chile Flakes |

|
Instructions:
- For the Salad:
- Rub Chicken with chipotle, onion Powder, salt and pepper.
- Coat Chicken with chopped chipotle pecan pieces and sauté chicken in canola oil until done. Remove from heat and transfer to plate; set aside.
- In a mixing bowl add mixed greens, carrots, tomatoes, and blue cheese crumbles. Add desired amount of Chipotle Pecan Vinaigrette and mix together.
- Place on salad plate and top with sliced chicken.
- For the Dressing:
- In a food processor, add pecans and chop until smooth consistency. Add remaining ingredients and blended until fully mixed.
