CEDAR PLANK PISTACHIO SALMON

2 Cups

Azar’s Chef Xpress® Candied Pistachios** |
|
2 Cups
|
Panko Bread Crumbs |
|
2 Tbsp.
|
Granulated Garlic |
|
1 Tbsp.
|
Kosher Salt |
|
1/2 Tbsp.
|
Ground Black Pepper |
|
1/2 Tbsp.
|
Onion Powder |
|

Wild Salmon Filets, skin on (8oz each) |
|
2 Cups
|
Buttermilk seasoned with salt and pepper |
|
|
Canola Oil |
|
|
**You can also use Azar® Raw Pistachios |
|
|
Instructions:
- In a food processor, chop pistachios coarsely. Add bread crumbs, garlic, salt, pepper, and onion powder; stir to incorporate and set aside.
- In cold water rinse off salmon and pat dry. Dip flesh side of salmon in buttermilk and then dip into Pistachio mixture; repeat with the other filets.
- Transfer coated salmon to a tray and refrigerate until ready to cook.
- In a medium hot sauté pan, heat canola oil.
- Place salmon filets pistachio side down and cook for 5-6 minutes until lightly browned; flip filet and continue to cook for 3-4 minutes.
- Transfer partially cooked salmon filets to a oven ready tray and place in a preheated 350F oven for 10 minutes or until desired doneness is achieved.
