BEEF SALPICON w/ SPICY LIME PEPITAS
Recipe Yield: Serves 4
Ingredients:
1  Cup  Water
1/2  Cup  White Vinegar
1/2  Cup  Fresh Lime Juice
3  Tbsp.  White Cane Sugar
1  Tbsp.  Kosher Salt
1    Red Onion, thinly sliced
16  to 18 oz.  Flank Steak
1/4  Cup  Olive Oil
   Salt and Pepper as needed
1  - 2  Jalapeños, diced
1/2    Red Bell Pepper, julienne cut
1    Carrot, peeled and julienne cut
1/4  Cup  Fresh Lime Juice
3/4  Cup  Vegetable Oil
1    Avocado, diced
1/2  Bunch  Fresh Cilantro Leaves
   Salt and Pepper as desired
4  Oz.  Azar Spicy Lime Pepitas
2    Jalapenos, whole, roasted and sliced in half lengthwise
Instructions:
  1. Oaxacan Onions:
  2. In a bowl add water, vinegar, ½ cup lime juice, salt, and sugar. Add thinly sliced onions and marinate for 2-3 hours until onions are soft.
  3. To prepare the salad:
  4. Marinate Beef with Olive oil, Salt, and Pepper for 2-3 hours in refrigerator.
  5. Reserving marinade, grill Beef until desired doneness and set aside. Allow to cool and shred into long strips. Once cooled, heat marinade and fry shredded beef until crispy.
  6. Combine shredded beef with diced jalapenos, bell pepper, carrots, lime juice, Oaxacan Onions, and vegetable oil until thoroughly mixed.
  7. Add avocado and cilantro and season with salt and pepper.
  8. Place on top of mixed salad greens. Sprinkle with spicy lime pepitas and garnish with a half roasted jalapeno.
  9. Can be served with warm tortillas, sour cream, salsa and guacamole as desired.
