BEEF SALPICON w/ SPICY LIME PEPITAS

Jalapenos, whole, roasted and sliced in half lengthwise |

Instructions:
- Oaxacan Onions:
- In a bowl add water, vinegar, ½ cup lime juice, salt, and sugar. Add thinly sliced onions and marinate for 2-3 hours until onions are soft.
- To prepare the salad:
- Marinate Beef with Olive oil, Salt, and Pepper for 2-3 hours in refrigerator.
- Reserving marinade, grill Beef until desired doneness and set aside. Allow to cool and shred into long strips. Once cooled, heat marinade and fry shredded beef until crispy.
- Combine shredded beef with diced jalapenos, bell pepper, carrots, lime juice, Oaxacan Onions, and vegetable oil until thoroughly mixed.
- Add avocado and cilantro and season with salt and pepper.
- Place on top of mixed salad greens. Sprinkle with spicy lime pepitas and garnish with a half roasted jalapeno.
- Can be served with warm tortillas, sour cream, salsa and guacamole as desired.
